Owners of Cosimo’s Brick Oven chain branding new chain ‘the Starbucks of pizza’

Fishkill, N.Y. (December 5, 2012) – Cosimo’s Restaurant Group, one of the Hudson Valley’s premier restaurant groups, yesterday celebrated the grand opening of its newest eatery, The Pizza Shop, at 703 Route 9 in Fishkill, N.Y., with plans to expand the chain throughout the Hudson Valley in the near future.

The Pizza Shop is a family-oriented, affordably priced pizzeria offering unique, artisan-quality pizzas typically found at high-end restaurants. The individually prepared pizzas are baked in an open-air kitchen. The Fishkill location is the restaurant group’s second for the classic pizzeria with a twist – The Pizza Shop on 27 S. Water St. in Newburgh, N.Y., opened in January 2011.

“We want to do with pizza what Starbucks did with coffee,” said The Pizza Shop co-owner Nick Citera. “They became experts of a commodity. We’re now taking on that challenge. Gourmet pizza will never be the same.”

Future restaurant locations could include Northern Westchester County and Albany, N.Y., Northern New Jersey, and Fairfield County, Ct. in the near future. The owners aren’t taking any ideas off the table.

“It’s perfect for when you want gourmet on the go,” said co-owner Nicolas DiBrizzi. “It’s been a hit in Newburgh and we’re sure it will take off in Fishkill, home to a vibrant shopping and living community, and others down the road in the Hudson Valley, New York and beyond.”

The Fishkill restaurant employs 10-15 people and occupies a beautifully renovated space at Village Shoppes, a plaza at the corner of Main Street and Route 9 in Fishkill, along one of the most vibrant corridors in the region. The Pizza Shop has indoor and outdoor seating, with tables along the beautiful, historic Village of Fishkill Main Street. The interior walls are decorated with dozens of historic photographs of Fishkill. Ample off-street parking is just outside the door.

One of the signature culinary treats at The Pizza Shop is an artisan, thin-crust, Crispina-style pan pizza cooked in a brick-lined oven reaching a scorching 700 degrees. In addition to daily entrée specials, other menu items include gourmet sandwiches on house-baked breads, pastas, pizza rolls, salads and desserts. Citera said that in addition to its full menu of gourmet food, The Pizza Shop’s cafe-like ambience, with free WiFi and power plugs at most tables should make it a hit with students, families, shoppers and others on the go.
